The cool nights of October remind us that summer has passed,
fall is here and winter is just around the corner. As the
days get cooler and shorter, cling to the juiciness and taste of summer
by taking advantage of the late-season California peaches, plums and
nectarines still available at your local grocery store. Remember these
precious summer gems will only be available through the end of October
until a fresh new season begins in May.
If
saying goodbye (for now) is just too hard, consider canning.
With minimum ingredients and hardware needed, the simple
act of canning will provide a taste of summer throughout
the winter months.

Tarragon
Turkey Salad Lettuce Cups with Plums and Toasted Almonds
A
deliciously light appetizer or entree that blends oven
roasted turkey breast with sweet California plums,
spiced with fresh chopped tarragon, topped with toasted
almonds for a little crunch and served over butter
lettuce leaves. Yumm!

Ingredients |

| 12 |
|
ounce extra thick, deli-sliced,
low-sodium oven-roasted turkey breast |
|
| 2 |

fresh California plums, pitted and
diced |
|
| 1/2 |
|
cup thinly sliced celery |
|
1/4 |

cup minced red onion |
|
| 1/4 |
|
cup light mayonnaise |
|

tablespoon fat-free plain yogurt |

tablespoon white wine vinegar |

tablespoon finely chopped fresh
tarragon |

Sea salt to taste |

tablespoon sliced almonds, toasted |

butter lettuce leaves |

Preparation
Stir
together all ingredients except almonds and lettuce
in a medium bowl. Cover and refrigerate until ready
to serve. Stir in almonds just before serving. Spoon
about 1/4 cup mixture into each lettuce leaf.

serving: 170 calories, 17g protein, 9g carbohydrate,
7g total fat, 45mg cholesterol, 740mg sodium, 2g
fiber. |
