It
all begins when the spring blossoms disappear and the fruit
begins to grow and mature on the tree. Watchful eyes and
experienced hands tell the grower when the fruit is ready
to be harvested, at which point each piece is individually
hand-picked and gently placed in totes or buckets.
The
fresh-picked fruit is then taken to a packing shed where
it is cooled, washed, sized, sorted, labeled and thoroughly
inspected to meet strict quality standards. Only then are
these California peaches, plums and nectarines considered
ready to ship. The fruit is carefully packed into the types
of boxes you see in your produce department, then shipped
to your store on a refrigerated truck to keep it fresh, ripe
and delicious.

Preparation
Puree
1/3 cup beans with remaining dressing ingredients
in a blender until smooth; set aside. Toss remaining
beans with all salad ingredients in a large bowl.
Drizzle with dressing and toss gently. Place equal
amounts of salad in the center of each wrap. Fold
in one side then roll up to enclose. Makes 4 wraps.
