by Enjoying the First Harvest of Fresh California PPN. Spring
is in the air but summer is just around the corner. After
a restful winter, filled with lots of rain- perfect for the stone fruit
trees in California and a sunny spring, the first varieties of fresh
peaches, plums and nectarines will soon be harvested. Though the peak
harvest is June, July and August for stone fruit, you will start to see
the first fruit of the season over the next couple of weeks.
In
fact one of the first varieties to be harvested is a white-flesh
peach, typically harvested at the end of April. Did you know
that about 25% of fresh California peaches and nectarines
are Summerwhite® varieties?
Summerwhite® or
white-flesh peaches and nectarines are less tart than yellow-flesh
varieties and can be just as sweet and ready-to-eat when still firm and
crunchy, as when soft and juicy. Look for a creamy yellow background,
with no green around the stem end when selecting a white peach or nectarine. |

Rum-Poached
White Peaches with Coconut Crisp
This
mouth-watering recipe is a perfect finish to any get
together or night at home. The simplicity and sophistication

Ingredients |

Rum-Poached Peach |
|

cups water |
|
3/4 |
|
cup white rum |
|
1/2 |
|
cup sugar |
|

lime slices |

fresh California Summerwhite® peaches,
pitted and halved |

Coconut Crisp |
|
| 1/3 |
|
cup shredded coconut |
|
| 2 |

tablespoons chopped macadamia nuts |
|
| 1 |

tablespoon butter |
|
| 1 |
|
tablespoon brown sugar |
|
| 1/4 |
|
teaspoon cinnamon |
|
|
Preparation
Bring
water, rum, sugar and lime slices to a boil in a
medium saucepan. Add peach halves, skin side down,
and cook for 2 minutes; remove and let cool slightly.
Carefully slip off skins with your fingers and place
back in simmering liquid. Cook for 2 minutes, then
turn over and cook for 2 minutes more. Remove peaches
from liquid and let cool. Place cut side up on a
small baking sheet. Mix topping ingredients in a
small bowl until well blended and sprinkle equal
amounts over each peach half. Broil several inches
from heat for about 2 to 3 minutes or until golden
and bubbly. Makes 4 servings.

analysis per serving: 200 calories, 2g protein, 30g
carbohydrate, 9g total fat, 10mg cholesterol, 45mg
